Sundance Tortilla Soup

Ingredients
  • olive oil
  • 1/2 jalapeno minced
  • 1 medium red onion diced
  • red bell pepper
  • 14.5oz cans chicken/vegetable broth
  • 28 oz. can diced tomatoes
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 16 oz. bag frozen corn
  • 1-2 cans black beans
  • 1/2 cup chopped cilantro
  • cooked and shredded chicken breast
  • tortilla chips  (optional)
  • avocados (optional)
  • cheddar cheese (optional)
  • sour cream (optional)
  • lime wedges (optional)

Directions
In a large sauce pan heat oil over medium heat. Add jalapeno, onion, tomatoes and corn. Cook about 15 minutes, stirring until all vegetables are soft.
Add chicken broth, diced tomatoes, cumin, salt, and pepper. Cook on medium low heat.
Add corn and black beans
10 minutes before serving add cilantro and cooked chicken.
Serve with: lime wedges, cheese, sour cream, avocados, and tortilla chips.
